Recipe: Hamburger

It seems odd to post a recipe for hamburgers but this is actually Japanese hanbaagu (ハンバーグ), or hamburger steak/Salisbury steak. The biggest difference is the sauce - the US version uses more of a gravy whereas the Japanese version has a glorified ketchup sauce. I like to make this about once a month because you can pre-portion your meat and you can also freeze the prepared patties so it’s very quick to cook after coming home from a long day.

Hamburger Recipe
Makes 2 medium hamburger patties, or 3 small ones. You could also make smaller, meatball-sized ones for use in bento or for children. This recipe is taken from “Kihon no Ryori” (2007)
Ingredients
- Ground beef and pork, equal amounts (240 g)
- Onion (1 small)
- White bread (1/2 a slice)
- Milk (2 tablespoons)
- Egg (1)
- Pinch of salt
- A little soy sauce
- Garlic (1 clove, minced)
- Salad oil (1 1/2 tablespoons)
I only used pork because I don’t eat beef and I used panko, Japanese breadcrumbs, instead of white bread. I also substituted the egg with mayonnaise because I didn’t have one, but the mayonnaise achieves the same effect.
Directions
- Mince the onion and sauté in a frying pan with 1/2 tablespoon oil. Remove from stove and pour onto paper towels to remove excess oil.1
- Pour milk over bread and let sit for 2 minutes.
- Mix the ground beef and pork, onion, white bread, milk, egg, salt, and soy sauce by hand. Form into 2 patties and make sure there is no air bubbles inside.
- In the frying pan, add 1 tablespoon oil and the minced garlic. Add the patties and cook until done.
Sauce Recipe
Ingredients
- Ketchup (2 tablespoons)
- Worcester sauce (2 tablespoons)
- A small amount of pan drippings
Directions
Mix all ingredients thoroughly. Spoon over hamburger.

I remember the first time I came to Japan as a wee little kid, and I was tricked into believing we were gonna have steak for dinner. We got hambaagu. -_-”
The recipe looks simple enough, though I’ll either skip on the sauce or come up with one of my own that doesn’t involve ketchup :P
