@Caitlin: Considering my budget/cheapness, brown rice would really be a luxury now :P Thanks for the tip on frozen peas btw, I'm now enjoying slightly crisp/definitely NOT mushy peas I tossed at the last moment in my makeshift risotto right now.

@issa-sa: The only brown rice I could find there was short grain and rather expensive. One coworker said that the only place she could find it was in health food shops, although I found large bags at the farmer's stand. My guess is Osaka doesn't have many of those within the city... :)

And yes, the frozen peas goes in frozen...the heat from the rice is more than enough to thaw them. They won't end up turning mushy and still remain a little sweet.

My health-conscious parents introduced brown rice into our household some time before I came to Japan... where it's completely disappeared from my diet. Miss that texture like you said and how every mouthful doesn't go down as 'forgotten'/'taken for granted' as white rice :P

Btw, do the frozen peas go in frozen (the cooked rice warming them up) or boiled etc.?

We totally need to bake together. I love cooking (sadly, my waistline reflects my love). By the way, the photo is fantastic.

@Emily: I've always been told to let cookies sit so it was a surprise to me when this recipe said not to. I've tried it both ways and I definitely don't like baking them right away. It's not a taste thing, it's an appearance thing for me.

PS - We need to bake together!

This is very similar to the recipe I use from Cooks Illustrated. They suggest letting the butter, sugar, egg, and vanilla mixture rest for a while in order to make the cookies crunchy around the edges and chewy in the middle. (Mix for 30 seconds, let stand for 3 minutes, repeat 2 more times) I find that it works well, if you like that cookie structure.
